Meal prep gets a bad rap because most people approach it like a lab experiment. Five identical containers, beige food, no joy. Grain bowls solve the boredom problem if you build them like a salad bar. One grain, one protein, three vegetables, one sauce, and a handful of toppings.

Start with a pot of farro or brown rice. While it cooks, sheet-pan roast a tray of vegetables and a tray of protein. Whisk a tahini dressing and a chimichurri while the timer runs. Dice cucumbers and pickle a small bowl of red onion. Total active time is around forty minutes; total clock time, ninety.

Pack the containers with the components separated. The grain on one side, the vegetables on the other, the protein in the middle, and the sauce in a small jar that does not touch anything until lunch. The bowls survive five days because the components are dressed at the moment of eating, not on Sunday afternoon.
